Do you have a good soup recipe to share?
Here is one from me to you:
Fire Roasted Corn Soup
4 cups Frozen fresh corn
1 cup diced fresh onion
1 cup diced celery
1/2 cup diced frozen fresh carrots
1/2 cup diced fresh red bell pepper
1/4 cup diced pimento
1/2 cup solid packed chicken base
1 tablespoon cumin
1 teaspoon cajun seasoning
1 teaspoon garlic powder
1/4 tsp. cayenne (or less if you don't like hot)
salt and pepper to taste
Throw everything in a large stock pot, cover with water and bring to
a slow boil reduce heat and simmer for a couple of hours.
Now add a cream soup base roo'(or make your own).
A roo' is a soup base thickener added to a small amount of water then
whisked into the soup.
Whisk until all lumps from roo are gone.
Simmer a couple more minutes and serve.
note: if making your own roo' use 1 cup of milk, 1/2 cup flour and a
couple of spoons of corn starch. Whisk this together then whisk it
into the soup, stirring until it starts to thicken.
