This is my favorite Crock pot recipe.
Slow Cooker Enchiladas. It came from the Taste of Home website...my favorite source for new recipes.
1 pound ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 can (16 oz) pinto or kidney beans
1 can (15 oz) black beans, rinsed and drained
1 can(10 oz) diced tomatoes and green chilies, undrained (Rotel)
1/3 cup water
1 tsp chili powder
1//2 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
2 cups shredded cheese (recipe calls for 1 cup sharp cheddar and 1 cup Monterey Jack) I use whatever I have on hand, usually cheddar and/or Mexican blend
6 flour tortillas (6 inches)

In a skillet, cook beef, onion and green pepper until beef is browned and vegetables are tender; drain.
Add the next 8 ingredients; bring to a boil. Reduce heat; cover and simmer 10 minutes. Combine cheeses. In a 5 qt slow cooker, layer about 3/4 cup beef mixture, one tortilla and about 1/3 cup cheese. Repeat layers. Cover and cook on low for 5-7 hours or until heated through. 4 servings. My note: my crock pot doesn't have high/low settings, just on/off. I usually cook it about 3 1/2 to 4 hours and it's fine.
